Why bamboo? Bamboo is actually a grass that grows to a harvestable height between 3-5 years. Some species grow up to 2 feet per day. After harvesting, bamboo does not require replanting. Bamboo has an extensive root system that continually sends up new shoots, naturally replenishing itself, making it one of the most renewable resources known: Our unique bamboo cutting boards are hand crafted using hundreds of tiny laminated bamboo strips. Unlike most other hardwoods, bamboo absorbs very little moisture and consequently does not shrink or swell as much, making it a superior choice of material for cutting boards. It is 16% harder than maple which means less visible knife marks keeping the cutting board looking brand new for years to come. Many people like to use one side for cutting and the other side as a serving tray. We recommend washing with a mild detergent in warm water and periodically wiping with mineral oil to bring out the beautiful grain of the bamboo. We don't recommend using a dishwasher: No old growth forests are touched, no trees are cut: Bamboo is 16% harder than maple wood, 1/3 lighter in weight than oak, yet in some instances as strong as steel. Bamboo holds the promise of a sustainable, cost effective, and ecologically responsible alternative to the widespread clear cutting of our old growth forests: The bamboo we use, Phyllostachus Pubescens (more commonly referred to as "Moso") is grown 500k west of Shanghai in China. This part of China has a temperate climate which encourages a slower growing bamboo and therefore producing a much denser, harder and durable culm or stalk.
